My daughter is a pretty picky eater, but her favorites are a little all over the map. She loves tacos, but not enchiladas; spaghetti, but not lasagna; and salmon, but not white fish. Who knows! Anyway, for her Valentine’s Day party, I made one of her favorites, tacos, but with prettier “packaging” and less mess.
I have seen taco cups all over made by shaping a tortilla into a muffin pan. I knew I would need a lot of these taco cups to feed 10 people, and I didn’t want to use all of those tortillas. I had wonton wrappers in the fridge, and I had used them to make lasagna before, so I decided to give it a shot with tacos.
The kids devoured them! Like, seriously, they inhaled the things! Ever since then, my daughter only wants her tacos this way. Today, we had them for supper, so I thought I would share this super easy recipe with you.
First, gather your ingredients. You will need ground beef (1 lb makes 2 dozen taco cups), salsa, wonton wrappers, and cheddar cheese to start.
I used meat that I already had seasoned with taco seasoning (we make big batches and keep it in the freezer for quick use in tacos, nachos, etc.) Obviously, just mix ground beef and taco seasoning (according to package directions) if you don’t have any already made.
Once the beef is prepared, push the wonton wrappers into the muffin pan. Then, top with a big spoonful of ground beef, a spoonful of salsa, and a sprinkle of cheese. (Watch the amount of cheese – too much and they get really greasy and are not as good.)
Bake at 350 until the cheese melts and the edges turn golden brown – about 8-10 minutes.
Top with your favorite taco toppings – for us, that’s diced cucumber, shredded lettuce, sour cream, and a sprinkle of green onion.
There you have it – easy peasy, right?!
