I was never a big sports fan. I would watch the Olympics, but that was about as deep as my sports loyalty went. I grew up with four siblings who played hockey, so that was practically injected into my veins, but what I loved best about hockey was getting together with friends – watching the game together, cheering our teams on, making predictions (and sometimes having a friendly little bet) on who would take home the win, and best of all, the goodies and treats that accompanied all of the big games.
Now I am an adult and out of my hockey household. However, I didn’t escape entirely, as my husband is also a sports lover. The next big thing on the radar? That’s right… football!
Here’s the part of the post where I become transparent. I have no idea how football is played. Everything I learned about football came from watching “Remember the Titans” and a little of “The Blind Side”. I grew up in Newfoundland, where we didn’t even have football teams. Now I live on the “mainland” where people do appreciate football, and while I haven’t fully embraced the sport yet, I have definitely embraced the social aspect of the sport.
Every year, I watch as the football season opens and everyone gets so excited for tailgating, which to me, seems like the most fun thing in the world. So when someone mentioned how we miss out on all that fun here in Canada, an idea came to me. Why not throw a tailgating party at home? (You know me, I never turn down a chance to throw a party.)
One recipe I decided to try out was a simple one, but it ended up looking so elegant! I created these Sundried Tomato & Turkey Pesto Pinwheels in a snap, and here’s how you can make your own:
You will need:
- sundried tomato wraps (I used Dempsters)
- cream cheese (I prefer low fat)
- basil pesto (make your own, or take a shortcut and buy it like me)
- sundried tomatoes
- deli turkey
Start by combining the pesto and the cream cheese. Add in chopped sundried tomatoes and spread on tortilla. Add slices of turkey breast and roll up.
Speaking of the turkey breast, I need to stop and tell you about the one I used. I used the Maple Leaf Natural Selections hickory smoked turkey breast because first and foremost, it is the most tasty deli meat out there, but it is also all natural and chemical free, which is a great choice for my family. (My husband, who is trained as a chef, also says it’s the best deli meat he has ever had – and he is very picky! After I was done, I rolled up the remaining slices and my kids ate them in about 2.5 seconds, and I didn’t have to feel bad about filling them with nitrates!
And, back to the recipe: Using a sharp knife, slice the wrap into 2″ sections, and secure each section with a toothpick. I added a little washi tape flag to add a little touch of cuteness… although I doubt the guys will notice! I used green because it seemed football-ish.
